Paneer Lettuce and Tomato Sandwich with Sweet Basil Mayonnaise


 

Description
Here is a vegetarian version of the classic BLT Sandwich! Served with a homemade sweet basil mayonnaise!
 
Ingredients
• Freshly made grilled paneer patties
• Lettuce
• Tomato
• Homemade bread buns
• Sweet Basil Mayo
 
For the Sweet Basil Mayo
• 1 cup unsweetened condensed (evaporated milk)
• 1 cup sunflower oil
• 3 tbsp sugar
• 1/2 tsp salt
• 4 tbsp lemon or lime juice
• Handful of fresh basil leaves
 
For the Bread
• 2 cups wheat flour
• 2 cups white flour
• 2 cups plain yogurt or buttermilk
• 1 tsp baking powder
• 1 tsp baking soda
• 1/4 tsp salt
 
Preparation
1. We are going to begin by preparing the fresh homemade bread buns. First preheat the oven to 230C/450C. Then add all the dry ingredients for the bread into a mixing bowl and mix very well.
• 2 cups wheat flour
• 2 cups white flour
• 1 tsp baking powder
• 1 tsp baking soda
• 1/4 tsp salt
2. Next add the plain yogurt or buttermilk.
3. Then knead into a dough.
4. Make small round patties from the dough and lay on a floured baking pan. Then take a sharp knife and make small slits into the top of the dough. Bake for 10 minutes at 230C/450F and then reduce the heat to 200C/390F for an additional 20 minutes. You know it is done when you tap on it and it sounds hollow when you take them out of the oven.
5. Next we will make the Homemade Sweet Basil Mayo. Gather all your ingredients:
• 1 cup unsweetened condensed (evaporated milk)
• 1 cup sunflower oil
• 3 tbsp sugar
• 1/2 tsp salt
• 4 tbsp lemon or lime juice
• Handful of fresh basil leaves
6. Place all the ingredients, except the lemon or lime juice, into a tall container. Prepare the lemon or lime juice for pouring into the mixture.
7. Use a hand blender and begin mixing the the ingredients in the jar.
8. Then slowly add the lemon/lime juice while still mixing the ingredients.
9. The mixture should immediately begin to thicken. That's it!
10. Next it's time to grill some paneer patties. If you can, use freshly made paneer. It only takes about an hour to make.
11. Cut the paneer into the size of the bread buns. Then grill with a little ghee and salt on a non stick pan until golden on all sides and you are done!
12. Now time to put it all together! Cut the bread buns in half and spread the Sweet Basil Mayo on both sides. Stack the paneer patty, lettuce and tomato and your sandwich is ready to Serve!
