Strawberry Ribbon Bread
•1½ C all purpose flour
•1 C sugar
•½ Tsp baking soda
•1 Tsp baking powder
•3 Tsp egg-replacer + 4 Tbsp warm water (beaten until smooth)
•½ C butter softened
•1½ Tsp vanilla
•¾ C milk
•8 oz/227 gm strawberry flavored cream cheese
•Lemon rind from 1 lemon
1.In a bowl, combine the flour, sugar, baking soda and baking powder. In another bowl, beat the egg-replacer, butter and 1 Tsp vanilla until smooth.
2.Add the dry ingredients to the wet mixture and add the milk gradually. Beat until smooth in consistency.
3.In another bowl, beat the cream cheese and the remaining vanilla and lemon rind.
4.Grease an 8-in x 4-in x 2-in loaf pan. Spoon half of the batter. Spread the cream cheese filling. Top with the remaining half batter.
5.Bake 350 F/180 C for 65-70 minutes or until a toothpick inserted comes out clean (Cover loosely with foil if the top becomes brown quickly without being baked from inside). Cool for 10 minutes before removing from pans to wire racks to cool completely.
