Apple-pear muffins
Ingredients & Preparation
Muffins:
•1 ½ tsp egg replacer, mixed with 2 tbsp warm water
•3 tbsp brown sugar
•½ cup milk
•¼ cup butter, melted
•1 ¼ cup whole wheat pastry flour/or regular flour
•1 ½ tsp baking powder
•1 tbsp flaxseed meal, optional
•1/8 tsp salt
•½ to 1 small eating apple, finely chopped
•½ to 1 pear, finely chopped
Topping:
•4 tbsp brown sugar
•1 tsp ground cinnamon
Preparation
Preheat the oven to 400F. Line muffin pan with 12 paper cases.
Mix the egg replacer, sugar, milk, and melted butter in a large bowl. Sift in the flour,
baking powder, and salt. Add the chopped apple/pear and mix well.
Spoon the mixture into the prepared muffin cases. To make the topping, mix the sugar and
cinnamon. Sprinkle over the uncooked muffins.
Bake for 30 minutes, until they are golden brown on top. Transfer the muffins to a wire
rack to cool.
