Green and Red Salad


•¼ cup extra virgin olive oil
•2 tbsp balsamic vinegar
•1/2 tsp salt
•½ tsp pepper
•1 tbsp Dijon mustard
•3 cups of mixed greens (mixed colored leafy lettuces)
•1 cups shredded cabbage
•1/2 bulb fennel, trimmed, thinly sliced
•1 red pepper, thinly sliced
•½ cup fresh Italian parsley leaves
•¼ cup fresh mint leaves

Whisk oil, vinegar, honey, salt, and pepper in a large bowl until blended.
In a big bowl, mix and toss all the ingredients. Add dressing to toss when it is ready to serve.
