Carrot Pineapple Cake


 

Ingredients
•All purpose flour……………………………………….1½ C
•Sugar………………………………………………………1 ½ C
•Ground cinnamon……………………………………..½ Tsp
•Baking soda……………………………………………..¼ Tsp
•Salt…………………………………………………………¼ Tsp
•Yogurt……………………………………………………..3 Tbsp
•Melted butter……………………………………………¾ C
•Finely grated carrots…………………………………1½ C
•Vanilla essence…………………………………………1 Tsp
•Well drained crushed pineapple………………….½ C
•Chopped nuts……………………………………………¼ C
Preparation
1) In a mixing bowl, combine flour, sugar, cinnamon, baking soda and salt. Add yogurt, butter, carrots and vanilla. Beat until well combined.
Stir in the pineapple and nuts.
2) Pour into a greased and dusted 8-inch x 8-inch baking pan. Bake in a preheated oven at 350 F/ 180 C for 1 hour or until a toothpick
inserted near the center comes out clean. Cool on wire racks. Cut into pieces of desired size.
