Cashew Nut Cookies


•1 cup butter, softened
•2 cups flour,
•1 tsp flaxseed meal, optional
•¼ cup cornstarch
•1 cup confectioner’s sugar
•2 tbsp peanut butter
•½ cup chopped cashew nuts
Preheat the oven to 350F and grease two baking sheets.
Mix the butter and peanut butter in a bowl. Add sugar, cornstarch, and flour. Mix well to make a soft dough. Divide the dough into 25 small balls. Place the balls on the baking sheet. Press the tops of the balls of dough flat then press a few of the cashew nuts into each of the cookie. Bake the cookies for 18 minutes. Leave to cool for a few minutes before transferring them to a wire rack.
