Sweet Potato and Paneer Chili over Rice


 

Description
This is not your ordinary chili. Very healthy and satisfying!
 
Ingredients
• 1 cup cubed paneer
• 1 1/2 cups cooked brown beans
• 1 medium sweet potato
• 1 green bell pepper
• 4 fresh tomatoes
• 2 green chile
• 1 1/2 cups whey or fresh water
• 1 tbsp chopped fresh ginger
• 2 tbsp ghee
• 1 tsp cumin seeds
• 2 tsp salt, and pepper to taste
• 1/2 tsp turmeric
• 1/2 tsp chili powder
• 1/4 tsp hing
• 1 tsp sugar
• Cooked rice for serving
 
Preparation
1. First chop up all the veggies, paneer, chile and ginger.
2. Place the tomatoes and 1 green chile in the blender.
3. Blend until smooth.
4. Heat the ghee in a large pot and then add the cumin seeds.
5. When the cumin seeds turn a little brown add the chopped green chile and the ginger and fry for about 30 seconds.
6. Then add all the veggies and paneer. Pan fry for a minute.
7. Then add the pureed tomatoes.
8. Add the whey or water and the remaining spices.
9. Then add the cooked beans, including the cooking water, to the pot and cook for 10 -15 minute until the sweet potatoes are cooked through.
10. Serve with rice, bread or chapatis.
