Kaju Cookies
Ingredients
• Cashew- nut – 125 gms
• Icing sugar or powder sugar – 70 gms
• Cardamom powder – 8-10
• Saffron – ¼ tsp
• Almond extract – ½ tsp
• Milk – 2 tsp
Preparation
1. Ground cashew nut and sift them; dissolve saffron in milk.
2. Mix cashew nut powder, sugar, almond extract and cardamom powder.
3. Mix saffron milk. Knead them to form a puri- like consistency.
4. Take two plastic, in between them put a piece and roll out a roti, less than ¼ inch in thickness.
5. Cut with biscuit cutter.
6. Make all kaju puri in the same way.
7. Grease and dust an oven tray.
8. Arrange all the puri and baked for 15 minutes at 375 Fahrenheit.
9. Leave for 5 minutes and remove them with palette knife.
10. Cool and then cover in the butter paper and keep in a container.
