Soaked Chipotle Bean and Paneer Sandwich


 

Description
Here is a unique dish that is simply delicious! The smokey and slightly sweet sauce from the chipotle beans is absorbed into the thick bread and softens it so that you can cut through it easily with a fork. Topped with crumbled cheese, fresh cream and cilantro, this dish is sure to impress!
 
Ingredients
• 2 cups cooked black beans
• 8 pieces of thick crust bread
• 4 pieces grilled paneer filets
• 5 large tomatoes
• 1 green chile
• 2 chipotle chiles
• 2 fresh oregano leaves
• 2 fresh sage leaves
• 3 tbsp ghee
• 2 tsp brown sugar
• 1 tsp ground dried ginger
• 1/4 tsp hing
• 2 tsp salt
• 1/4 tsp pepper
• 1/4 tsp chili powder
• 1 tbsp lime juice
 
Preparation
1. To begin, place the tomatoes and chipotle chiles in a blender. 
2. Blend until smooth.
3. Chop up the fresh oregano, sage and green chile.
4. Heat 2 tbsp ghee in a medium sized pot and add the herbs and green chile. Fry for about a minute.
 
5. Then add the tomato puree and remaining spices.
• 2 tsp brown sugar
• 1 tsp ground dried ginger
• 1/4 tsp hing
• 2 tsp salt
• 1/4 tsp pepper
• 1/4 tsp chili powder
 
6. Cook the sauce for about 8 minutes until the tomatoes are fully cooked through and a deep red color. Here is what it should look like.
7. Then add the cooked black beans and lime juice and cook for an additional 5 minutes. Turn off the flame and set aside.
8. Next we are going to toast the bread. Heat the oven to the highest setting. Then spread the bread out onto a baking plate. Spoon some ghee on each piece and then sprinkle with a little salt. Place in the oven and bake each side until it is all toasted.
9. Here is the finished toasted bread.
10. Next grill some paneer patties. In a non stick frying pan heat 1 tbsp ghee on medium high flame and place cut paneer. Sprinkle on a little salt and cook until both sides are golden brown.
11. Now we have finished making all the ingredients. Time to put it all together. Scoop one ladle of chipotle sauce onto a serving dish.
12. Then place one piece of toast on top.
13. On top of the toast place a paneer filet.
14. On top of the paneer place another piece of toast.
15. Place a big scoop of chipotle beans all over the top.
16. Sprinkle on some crumbled cheese, fresh cream and cilantro.
