Vegan Muffin
Ingredients
• Cake flour – about 322g (2 ¼ )
• Baking powder – 1.5 tsp
• Salt – ¼ tsp
• Caster raw sugar – 170 gms
• Vegan margarine (use light oil if margarine not available) – ¼ cup
• Water – 320 ml
• Vanilla extract – 2 tsp
• Small apple – 1
• Vinegar / apple cider – 2 tsp
• Raisins – ¼ cup
• Almond Slices – ¼ cup
• Cinnamon powder – 1.5 tsp
Preparation
1. Preheat Oven to 480 degrees Fahrenheit / 250 degree Celsius.
2. Cut apples into small cubes, and keep aside.
3. Beat Margarine and sugar together till fluffy.
4. Add Vanilla Essence, Water, and mix well
5. Add Flour, Cinnamon Powder, and Baking Powder, mix till all dry ingredients are properly mixed with wet ingredients.
6. Add the apple cubes, raisins and almond slices in it.
7. Line your muffin tins with muffin paper holders.
8. Fold in the vinegar.
9. Fill the muffin tins with the batter.
10. Bake under 250 dc for 5mins, switch to 180dc (356 F) and bake for another 10-12mins.
11. Check the muffins by piercing a toothpick in the center of the muffin.
12. Leave muffins to cool.
