Sinful carbo truffles
• 12 oz carob chips
• 8 oz cream cheese, softened
• 2 tbsp caffeine free coffee, mixed with 4 tbsp warm water
• ½ cup carob powder
• ¼ cup nuts, finely chopped, optional*
In a large bowl, beat cream cheese until smooth. Gradually beat in melted carob chips (I normally melt the carob chips in the microwave), caffeine coffee, and vanilla until no streaks remain. Refrigerate for about an hour. Shape into 1 inch balls.
Roll the balls in carob powder. Sprinkle chopped nuts on top of each truffle.
