Buckwheat muffins
Ingredients
•1 ½ cup buckwheat flour
•2 tsp baking soda
•½ tsp salt
•1 cup chopped walnuts
•1 cup chopped dried fruits (you may use raisins, cranberries, papaya, pineapples, dates, etc.)
•½ cup butter, melted
•¾ cup warm milk
•1 cup mashed bananas
•¾ cup brown sugar
•1 tsp vanilla*, optional
•1 tbsp flaxseed meal, optional
Preparation
1.Mix flour, salt, and baking soda in a big mixing bowl. Mix milk, butter, bananas, vanilla *(only if your vanilla contains no corn syrup).Add wet mixture to the dry mixture.Mix all ingredients until combine. Fold in dried fruits and nuts.
2.Spoon batter into prepared muffin cups, filing each 2/3 full. Bake in a 350F oven for 20 minutes.
3.Cool on wire rack for 5 minutes.
